Keep reading here of several boats (earlier carb models) w/ hard start/stumble/no start when hot. I'd like to share some of my learnings.
Much of this is basic and known to many, but I hope it helps someone.

Fuel:
Today's fuel is not '70s or '80s fuel. It will expand more when hot, often flowing out carb vent tubes. Solution: set float levels slightly lower than spec, (2/32-3/32)

Fuel filter: If you install one, use a good one (filter/water separator) and install it before the fuel pump.

Fuel pump:
All pumps not created equal. A small block mechanical pump has dozens of different applications, thus parts and pieces (esp. springs). Solution: have pump rebuilt by specialist who can test pressure before installation. (Then & Now Automotive)

Carburetors: Most should utilize spring-loaded needle and seats for the marine environment. Also, on earlier (slanted) engines, the float level spec may differ between front and rear float bowl (if so equipped). Use correct marine specs.

Ignition coil: Not all 12v coils the same. Systems with ballast resistor use different coil than systems that don't. Solution: know the right resistance for the coil you need.

How do I validate that I have the correct ignition coil on the engine ('89 ski 351 Ford)?

Does it have any part # on it? If not you can measure the primary winding resistance.

Someone here will know the correct value to use with a ballast resistor.

Why do you think it might be wrong?

I do not believe the current ignition coil is OEM; wondering whether previous owner put on the correct coil.
