So I was upgrading the stereo in my 2002 SANTE, The speaker wire from various parts of the boat seems to come in light or dark grey one wire is solid the other wire has black stripe.

I assumed, that a same color wire one stripped one solid was a neg / pos pair. But upon connecting them that way i got no sound.

Is actually that a light dark is a neg positive pair?

Not sure what the standard is in radio installation as far as color coding but your volt meter won't lie....if you have one that is..

Speaker should work either way the wire is plugged in, reversing it only changes the phase.

One thing that Planet Nautique has, that we don't, is some of the "later" model wiring diagrams, at least a sampling in the 2000s.

I was curious so I poked around myself on some of the 2003 stereo diagrams (no 2002 available but should be similar).

Looks like you're right as far as the speaker wire coloring. Probably either the speaker is dead or the stereo/amp is not putting out. Check any applicable fuses.
