Left boat on trailer. took out stringers one at a time.   outboard port first then replaced then port engine stringer etc.   I did not block hull. Found on starboard side that hull bulged down on forward part when i was fitting the outboard stringer so i jacked up hull and it then fit.   

Here is my problem. I installed and glassed port side.   Im concerned that the port side may have bowed.   Plan to jack up boat with 4 jacks and use strait edge to compare both sides from the bottom.   Does anyone know what will be an acceptable deviaiton?

That’s not an easy question to answer, what would be enough to feel a difference, what would be enough to effect the wake a certain speed, what would be enough to possibly be unsafe at certain speeds and certain water or loading conditions are all likely to be different answers. Chances are however bad it is you won’t notice at some/many/all conditions.    Changes are likely to have a more pronounced effect the closer they are to the transom, as that area of the boat is more likely to be wetted under more demanding (higher speed) conditions. Take some pictures when you get it blocked and you can put a straight edge to it and then let the guessing begin.

I would cut pcs of cardboard to fit the contour of the good side, going port-starboard. Maybe every 1 foot of the suspect area.    Then you have gages to make judgment from.
