Regarding the gauges, have you done any testing? Do you have a VOM (volt Ohm meter)?

seems to have lights working but not on gauges and blower works... they just went out and all fuses are good... battery good and 30amp fuse on battery is good. boat starts but no gauges work

completely dead, no lights or gauges, when just turning on the ignition they don't go through test phase, no gauges, no tach, no speedo and yes I have a volt meter

Try running a separate ground wire to them from the battery and also separate positive wire also. Alligator clip jumpers are handy here
Keep it as original as YOU want it

This sounds like it has keyless ignition and them newfangled gauges that I know nothing about except they were troublesome in some model years right around yours
