What is the best type of caulk to use around the fins, prop shaft and water pick-up on the bottom of my boat? Thanks

Don't use caulk!
3M 4200 or 5200 is what you need. The 4200 is for things you might want to remove and the 5200 is like samsonite luggage.

Ive pulled struts with 5200 on it and at times will pull the Gel with it, very strong stuff adhesive/sealant

For non-permanant installs, Life Boat caulk also works well.
