Have a 1997 GT40 5.8 need a new thermostat since engine temp runs between 120 & 145. Where & what kind of thermostat do I need. Also how hard is it to install?

You need a 160 T-stat..from any of the usual marine parts vendor. Nautiqueparts, skidim, correctcraftparts, etc....
The install is quite easy, only loosen the 2 allen head bolts in the top t-stat housing, remove the old stat and gasket, clean the suface on both sides. Put a new gasket (usually comes with the new stat) and replace the stat. The pointy part should face up!
