My SAN has always done this. Big boot of steam when accelerating and some when cruising. When approaching WOT steam seems to increase. There is a little steam at idle. Impeller changed at the beginning of season and temp gauge never budges, even after 2/3 hrs of steady pulling. Engine rebuilt last season. I've read on posts that Nautiques can steam more than other boats due to the muffler set up. Here's a vid:

Any thoughts?

i answered on your thread over on PN as well, but that's normal. i noticed a little less exhaust on mine after a tune up with new plugs/wires/cap/rotor. may want to knock that out at the end of the season if it hasn't been done lately.
