I have a 78 ski nautique with a 351w. boat runs great up the lake but when pulling a skier out of the water it will not take the gas of the line. like its overloading with gas or something. any ideas or suggestions on what to do to fix this?

I'm not following this description. Do you mean it is starving for gas?

How do you know gas is not coming out of the fuel line?

If true, could be a plugged antisiphon valve.

meaning it will not take gas off start. its fine if you gradually give it gas, but pulling a skier out of the water it doesn't want to take the gas. trying my best to explan from idle to full throttle it floods, other than that its fine. are there any adjustments on the carb that will take care of this? jets to big maybe? its a 4160 holley carb

It might not be flooding, it might be going lean.

Take out any free play in the carbs accelerator pump linkage.
