I have a late 60s Mustang with a 318 CID engine. The temp. gauge does not register and it runs great but very cool. Do these typically use thermostats?
The temp. sender has a wire that runs to another sender in the bottom of the s/board water manifold. What is that sender?

It's a 50 year old boat, nobody knows what is going on with your engine. Post pictures.

Yes, thermostat. If you don't have one, install one. That might explain the cold temperature and with any luck, your low-reading gauge.
Chryslers used 2 temp senders, they are wired such that the gauge reads the higher of the 2. One is on the intake manifold, the other the exhaust manifold. Sounds like your set up is correct.
