Help, we were finally about to hook everything back up on the boat and and we are off by just a about a 3/4 of and inch, are there any adjustments that don't involve pulling the engine and shaving the stringers?

Jon,
Is the shaft centered in the log? How about the strut? Centered on the hull and not bent or twisted? Are the stringers centered? Something's off!

Yes it is centered and the engine is centered. The engine is just over 3/4 of an inch too high

If your engine mounts are adjusted to the limits, then your only option is to start cutting stringers.

Where is the adjustment on the mount maybe it is heat but I'm clueless

First I suggest pulling the mounts off the engine for a good cleanup and paint. You did a great job on the engine and looks like nothing on the mounts. Pull them apart wire brush or sandblast then paint. I feel once you take them off and apart you will see the adjustable features. It's easier than trying to explain in writing but, if you still have a problem visualizing, come back.

The vertical adjustment is the vertical threaded rod running through the tie rod end mounted in the split block on the engine. Horizontal is my moving the shank of the tie rod in the split block. It looks like you still have some vertical left to lower the aft end. You still need to clean up the mounts!

Do yourself a favor and pull the mounts apart clean and coat the pins with anti-seize that will make your life so much easier in the future when you need to do alignments.

When you had old stringers out, was it supported by the trailer only? If so, the hull may have hooked some.

The finished height dimension seems to be the culprit here-how much glass did you overlap the stringers with? did it equal the height of your original stringers?

Stringers are too high, we've got them planed down and the wiring finished but have not had time to put the engine back in
