What is the best sealant to use when mounting replacement pitot clam shells, pitot pickups, platform brackets and exhaust flanges? If my platform brackets where never removed and resealed, It appears that the CC factory used a clear rubbery sealant about 1/16" thick. Can you purchase pre-cut gaskets for these items or items like the through hull bilge port on the forward starboard side, the anchor light mount, the bow nav light, or the fuel tank vent port on the upper right stern? Thank you!

Yep, 3M 4200 - any marine supply should have it.

It's messier and harder to clean off plus I don't feel it's adhesion is very good. Also, a primer must be used on certain materials.
