While out for ride last weekend, water started filling up my starboard gauge and trickling out the bottom of the face. It did this while displaying the proper speed. Then the gauge dropped to 0 mph and the water stopped collecting inside and simply drained out. What would cause this? Is there something clogging something else inside? I'm not really up to speed on how these gauges actually function other than having to clear out the pitot every season.

It's 5 o'clock somewhere...

Most likely a broken seam in the bellows. You need to take it apart and see what is going on and re solder if it's damaged. It works using the principle of the pressure of the water passing the pitot compresses the air in the sealed tube. Break the seal anywhere from the front to back of the boat ie the hose, the damper tube or the gauge and that's where the water will come out.
