Pics of the dash, seats, motorbox and rear deck area would be helpful. The details I can see, along with the serial number are pointing towards a 69.

The guys working on the front got the word on the 69 changes before the guys in the back did. .
Are you looking to purchase or have you already? It's missing the windshield chrome finishing ends which are very hard to find, the front seats have been changed and a later pylon is installed. Also a few other miscellaneous things have been done to it- gauges, platform, floor covering. Most likely a 289,looks like an Interceptor by the pulley's.
What are your plans for it?

I knew I was going to love this site from reading various posts. I just acquired her through barter (tree work), and just this morning the county deputy ran serial# and prior tags; she's free and clear and ready to title. I explained to him I wasn't sure of the year. I was told it was a 68. Now I need to submit all paperwork to BMV with correct year.

In yours and others' replies, I think I'm hearing it's a 68 with a 69 windshield. Please correct me if I'm wrong. I'm aware of the some of the add-ons you mentioned, but I'm relatively new to CC world. The goal is to restore it and have fun in it for a long time. My first CC, have always admired them.

As you can see, I'll obviously be starting with the steering, as the entire system (except rudder) is missing. I've started to research this and am seeing replacement systems for $150ish. Perhaps you know of reputable brand/dealer for this component. Bone yard for this? I live near S. Bend. Also, I was told motor is 351W. Here's motor pic:

No, the split glass windshield was an upgrade. Also, back then different parts were used for the build depending on what CC had in stock.

Late 68 or early 69... Gary has it right on the details (and Pete is right about the windshield).

I do not believe that the 351w fits under that box, most likely the original 289/302 Interceptor with later Pcm replacement manifolds. Someone dig out those exhaust pockets- originally would have been foamed in.

The 75+ pylon jives with the lack of a rope clearance bar- I’d bet it came without a pylon from the factory. I’m guessing no one needs to tell you that the platform was added.

A 351 will fit under the '68 Mustang doghouse. I have one set up that way. Some cuts are needed to the interior of the doghouse for riser clearance, but it does fit. Looks factory with the doghouse closed.

Unfortunately I don't have pictures of this and my boat is shrink-wrapped for the winter.
