I managed to bend my front tracking fin on a submerged obstacle and am getting ready to put a new one on. However, I noticed that my tracking fins are installed in what I would have guessed to be the "backwards" direction. Since I'm not aware of them ever having come off the boat, I assume they are correct but wanted to confirm here.

The fins have one edge that is more vertical and one edge that is sloped. Is the correct/normal orientation to have the vertical edge forward and the sloped side towards the stern?

As installed your tracking fins are in the correct orientation. The more vertical edge of the fin is the forward edge.
