When installing exhaust manifolds do yo need to apply some sort of gasket sealer or do you install them without a sealer?

I like to use the Red Hi Temp silicone sealer.
Keep it as original as YOU want it

It's not a bad idea to have a sanding block and/or a wire brush handy. When I replaced mine, there was some light rust/corrosion along the mating surface of the manifold. Good to get as much cleaned off as possible to get a good seal.
